Unique Wedding Cakes

I am looking to have a Mint wedding cake made... Crazy I know, but my husband does not eat sweets and the only sweets he does eat are mints, or chocolate covered mints. So i am trying to find someone who is creative and could make me (possibly) a mint-flavored cake with chocolate "frosting" or a white cake with mint/chocolate decor.

Any ideas?
